Sweet Somethings: Apple Pie Pancakes

Just whipped up this fun and easy faux apple pie (pancake) for brunch! Here's the ingredients & recipe, compliments of The Big Book of Breakfast:
• 2 apples, peeled, cored, and sliced

• 3 tablespoons butter or margarine
• 3 tablespoons sugar
• 1 teaspoon ground cinnamon
• 1/8 teaspoon ground nutmeg
3 large eggs
• 1/2 cup milk
• 1/2 cup flour
• 1 teaspoon baking powder
• 1/4 teaspoon salt
• creme fraiche or heavy cream topping (optional)

Preheat oven to 400ºF

In an ovenproof skillet (black cast iron works well) over medium heat, melt butter. Stir in sugar, cinnamon, and nutmeg. Add apples and saute until tender, about 7 minutes.

In a bowl, whisk eggs. Add milk, flour, baking powder, and salt and whisk until blended.

Pour mixture over apples. Bake until puffed and golden, about 18 minutes. Remove from oven and let stand for 5 minutes.

Whip up heavy cream for a few minutes until peaks form and add a dollup! Enjoy!
